Dinner idea

Here is one of my favorite quick and easy dinner ideas.

Black Bean Tacos

1lb of hamburger
1 can of diced tomatoes
1 can of black beans
Frozen corn to taste
Taco seasoning to taste
A large dollop of minced garlic

Brown the hamburger and drain the grease. Drain the can of beans and can of tomatoes. Add to hamburger along with the rest of the ingredients. Simmer for a bit until it is as thick as you like it. We top with cheddar cheese and sour cream. My husband adds gobs of hot sauce to his.

Sounds yummy! We make black bean tacos (without any meat), but I think my hubby would like the meat and bean combo better. Thanks for sharing!

I have an almost identical recipe that I pull out for taco night every few weeks - YUM!
